WICTW=What I cooked this week

Another busy week in the kitchen with some visitors to boot.  My new friend Dot came by to check out our operations.  she has a wonderful newsletter called Dot's Tasty Good Food.  Look for it, you'll be glad you did.  She loves to experiment changing old school recipes to Paleo style, and she's quite talented at it, I must say.  she brought a delicious treat to the kitchen using almond meal.  YUM!

Happy Holidays one and all!  we are in full swing for the season and wishing you the happiest of times!
We are so blessed to be so busy and want to share all the yummies we made this week. 
We did some cooking for Maximized Living owners and they had;

This was certainly our biggest week in the history of WCFY?.  With Karen and Fadia's help we were able to knock it all out in 2 days.  I just returned from the last delivery in Red Boiling Springs.  For those of you that don't live around here, it's a million miles away.  Actually 1hr. and 7 min.  It's a very elderly new client and I just couldn't say no.  She loves eclectic food.  See if you can pick out her order from the items below:

WICTW>What I Cooked This Week

This week we cooked for a vegetarian, a cancer patient in remission, a grad student .....
Karen was in Gatlinburg for school break with hubs and daughter, so I asked Josh our caterer to help out.  He did an amazing job.  Fadia, as usual, was hell on wheels, and my sweet friend is doing dishes to make a little WAM(walking around money>as my Canadian friend ,Jodi, calls it).  This week seemed to be a lot of comfort food...Fall is upon us.  Everything got done in record time, but after I delivered everything that night.  I was fried!

Ok, I've got to come clean.  Some of you may think I do all the cooking in the commercial kita\chen, but in truth, I have an amazing team of chef's that help.  Chef Karen Cage, my awesome biz partner, Fadia, hell on wheels..lightning speed in heels, Chef Melissa, Nashville State intern extraordinaire, Chef Josh Christmas, our caterer and "filler inner"!  Can't forget the employee that eats for his pay, my hubby, Bob.  He does so much that I can't handle and don't know or care to do!

Blogging, again!

Well, it's been a really long time, but I want to start listing what we make each week so all of you know how diverse our cooking is.  As long as it's healthy, we'll do it.  We even make a healthier version of Green Bean Casserole for our oldest client> a young 93!

We've added a catering Chef, Joshua Christmas(don't you love that name?)!  He has also started delivering boxed lunches to corporations.  We're so glad he's on board!

We have two other new kitchen team members.  Fadia ," I don't speak English", Karvonen.  Born in Jerusalem, when she doesn't understand a recipe she says, "I don't speak English" as a joke.  She wears high heels in the kitchen and runs circles around the rest of us!
Melissa Standley is our perfectionist.  A Mom to dogs, goats and a miniature horse, we now can recycle our veggie peelings!  She puts out a mean casserole!
