WICT= WHAT I COOKED TODAY

Tonight I am going to Brentwood/Cool Springs area to do a New Year's Eve Party for 5 couples.  Some of them thought they couldn't get babysitters, but found them at the last minute.  They are definitely ready to do a no-kid party!
Here is their menu:
APPETIZERS:  Shrimp and Grits in Phyllo, Thai Chicken Pizza
SALAD:  Spinach Salad w/ Warm Bacon Dressing
ENTREES:  Sweet Sausage and Broccoli Rabe Pasta, Beef Tenderloins  w/  Fresh Crab Stuffing, Spinach and Roasted Red Peppers
DESSERT:  Marirae's Homemade Irish Cream
I know they are going to have a great time!

WICT= WHAT I COOKED TODAY

Today I am embarking on a Quail recipe.  I haven't cooked quail before and actually can't remember ever eating it.  We just got a vacuum container system so I am trying to "quick marinate" the birds with it.  Looked easy on the instructional DVD.  I'll let you know.
The other dish has a boring title...Ravioli Casserole.  I am testing it for New Year's Day.  We are having a themed party.  It's "FOODS THAT BRING YOU LUCK".  Hey, I don't know of any one that doesn't need luck and prosperity in the coming year.  Circular foods are coin shaped, thus helping to bring good fortune in the new year.  The rav's are mini rounds.  I'll blog in the near future about these recipes and the others I will serve on our New Year's Day Luck Party!

WICT= WHAT I COOKED TODAY

Christmas Eve and Bob will get to come home early.  We've been invited to a friend's, but have decided to stay home and spend the day w/ each other.  I am making one of our favorite dishes ever, Hasenpfeffer.  We used to eat this in PA w/ our dear Friends Jann and Henry.  Here is what else is "cookin"!:
1HASENPFEFFER>RABBIT MAIRINATED FOR 4 DAYS IN A VINEGAR AND PICKLING SPICE BRINE>THEN IT IS BROWNED AND BAKED UNTIL "Golden Brown And Delicious"
2.GERMAN BREAD DUMPLINGS>BREAD CUBES, BREAD CRUMBS, EGG, ONION, MILK SHAPED INTO BALLS AND BOILED 'TIL THEY FLOAT
3.GRAVY.MADE BY STRAINING AND BOILING THE REMAINING MARINADE AND THICKENING.  IT HAS A SWEET SOUR TASTE.(MY FAVORITE PART OF THE MEAL)
4.SAUTEED SPINACH W/ BACON  i AM NOT A BACON FAN SO THERE WILL BE JUST ENOUGH TO FLAVOR THE SPINACH SLIGHTLY
6.ROMAINE SALAD W/ AVOCADO AND TOMATOES W/ HOMEMADE VINAEGRETTE

WICT= WHAT I COOKED TODAY

So, today I am making crabcakes for my friend Janna who owns the UPS store in Hendersonville, TN.  She will serve them to Rachael, "the twins" and her hubby for Christmas Eve dinner.  I've named them "VonKessel Krabby Patties, Secret Formula".  I downloaded a pic from the internet of the Sponge Bob version and colored it in(we no longer have a color printer).   I'll attach to the top of the package to entice the kids into trying them.
Also, I am making Chicken Tetrazzini to be given to a needy family in Gallatin.  We had donated the casserole to a silent auction event called the St. Nick Ball at the Bluegrass Country Club.  The winning bidder then donated it back to Aid for the World for the needy family.  the purchaser was my dear friend Shelia Woodall, Sr. Arbonne consultant for Arbonne International!

Made tons of all so they can eat off of it all week if they want!
