WICTW> What I Cooked This Week

Happy Holidays one and all!  we are in full swing for the season and wishing you the happiest of times!
We are so blessed to be so busy and want to share all the yummies we made this week. 
We did some cooking for Maximized Living owners and they had;
1.CHICKEN AND ASPARAGUS CASSEROLE>WITH ORGANIC CHICKEN THEY PROVIDED
2.CHICKEN AND KALE SOUP>  "
3.SPICY WASABI SALMON>THEY LOVE THINGS HOT!
4.THAI PINEAPPLE STIRFRY>A VEGETARIAN DISH WE MADE FOR ANOTHER CLIENT, TOO
5.DILL, ZUCCHINI, FETA, EGG CASSEROLE>  "

Our vegetarian couple> may I say she's trying to convince her hubs to eat this way. got the 2 items above +:
1.HOT AND SOUR NOODLES W/ BOK CHOY
2.QUINOA/AVOCADO SOUP
3.BLACK BEAN AND ZUCCHINI TORTILLA CASSEROLE

This family just sends me their requests>  easy peasy:
1.CHICKEN TORTILLA SOUP
2.TACO CASSEROLE
3.CHICKEN NOODLE SOUP
4.ANGEL HAIR W/ MEAT SAUCE
5.BLACK-EYED PEAS (healthy Southern style...yes, it can be done)
6.ROASTED BABY RED POTATOES
7.MAC + CHEESE> ssshhh!  contains butternut squash
8.STRAWBERRY SPINACH SALAD W/ POPPYSEED DRESSING

Here is a Mom and son that love "heat" too!:
1.CARIBBEAN CHICKEN
2.SPICY SALMON
3.MEDITERRANEAN GREEN BEANS
4.GARLIC SPINACH
5. TWICE BAKED POTATOES

This is a nice soft spoken grad student that hates eating out because of the unhealthy choices he feels forced to make:
1.BBQ BAKED CHICKEN> no high fructose corn syrup here!!!!
2.SPICY SALMON
3.ANGEL HAIR W/ BOLOGNESE
4.ZUCCHINI SAUTE.......

WICTW>What I cooked this week

Well, Karen and I were super busy, as Fadia was away this week.  Fadia is the cooking energizer bunny and we sure missed her.  All in all, though we put out some really great food and everyone was happy.
Here's what we made:
1.CARIBBEAN CHICKEN

4.CAULIFLOWER MASHED POTATOES
5.BALSAMIC CHICKEN
6.OKRA AND TOMATOES

ALL THE ABOVE WERE MADE KEEPING WITHIN THE STANDARDS OF THE MAXIMIZED LIVING LIFESTYLE.

11.PALEO SHRIMP FRA DIAVLO
12.GARLIC SPINACH
13.BALSAMIC CHICKEN
14.ROASTED ROSEMARY SWEET POTATOES

ALL THE ABOVE WAS FOR A GYM OWNER THAT FOLLOWS A PALEO DIET.

17.BUTTERNUT SQUASH SOUP W/ TURKEY SAUSAGE

ALL THE ABOVE WAS GLUTEN AND DAIRY FREE

WICTW>What I cooked this week

This was certainly our biggest week in the history of WCFY?.  With Karen and Fadia's help we were able to knock it all out in 2 days.  I just returned from the last delivery in Red Boiling Springs.  For those of you that don't live around here, it's a million miles away.  Actually 1hr. and 7 min.  It's a very elderly new client and I just couldn't say no.  She loves eclectic food.  See if you can pick out her order from the items below:
