Today I worked on sides for my client for her Thanksgiving celebration.  The turkey has been brining since yest. in veg. broth, pineapple juice, brown sugar, salt and seasonings.
Today I made:

6.TRADITIONAL DRESSING(HOPE SHE LIKES MINE BETTER THAN THE STOVETOP STUFFING SHE USUALLY SERVES>ICK!)

Saturday's shopping finds!

Today I left for Nashville's Farmer's Market around 10.  This is what I found:
1.ORGANIC WINGS FOR EMERALD GLEN FARM OUT OF KY.
2.ORGANIC KALE, CABBAGE, BUTTERNUT SQUASH, AND ARUGULA FROM DELVIN FARMS IN FRANKLIN, TN
3.SANTE FE CHEVRE SPREAD FROM NOBLE SPRINGS DAIRY
4.RASPBERRY LINZER COOKIES
5.ITALIAN BEANS FOR ROSE

From there we went to an International Market that specializes in Halal items.  From what I understand, this is kind of like  how kosher food is in the Jewish community.  This is what I got there:
1.PERSIMMON
2.TOM YUM SPICED PEANUTS
3.GOAT
4.GOLDEN JUMBO QUAIL
5.SQUID TENACLES
6.CARDAMON SEEDS
7. A MEAT PIE THAT MY FRIEND ROSE BOUGHT FOR ME>DELICIOUS!

Right next door was a Laotian mkt.  They offered some fresh made deli items.  I bought a sub looking sandwich for $3.  It was yummy..roast pork?, something similar to branschweiger, jalapeno, shredded carrots and daikon, and cucumber.  Here are my other purchases:
1.SPRING ROLL WRAPPERS TO MAKE FRESH SPRING ROLLS(MY NEW FAVORITE THING)
2.RICE STICK NOODLES
3.FRESH OYSTER MUSHROOMS>GORGEOUS

5.SWEET CHILI SAUCE W/O HIGH FRUCTOSE CORN SYRUP

Tonite for supper we are going to have "Lamb Eggs"(testicles), squid, roasted kale chips, and something w/ the mushrooms.  Thanks goodness my hubby is as adventurous as I.  Other wise I'd have to divorce him.  Just kidding..he's a keeper!

Today, I cooked for a really nice family in Brentwood!  I always try to make their food healthier, because the Mom and girls don't eat veggies. The request what they want rather than me making up a menu proposal for them. Hopefully, they won't read this blog!  (<:
1.SPAGHETTI W/ MEAT SAUCE(I ADDED BUTTERNUT SQAUSH TO THE SAUCE)(WHEAT PASTA)
2.FETTUCINE ALFREDO( MADE W/ ALL LOWFAT INGREDIENTS AND SKIM MILK)

6. CHEESE STICKS(FRIED IN OMEGA OIL W/ LITE CHEESE)
These cheese sticks are so yummy.  They hardly absorb any oil as they cook and turn out brown and crispy.  Dipped in marinara, they are the bomb!

WICT= WHAT I COOKED TODAY

This client is making me crazy.  She keeps changing her mind about what kind of eating plan she wants to be on.  One week she decides to do raw, then she doesn't like that.  Then no carbs but misses her jam and toast in the morning.  Last week it was not mixing carbs and protein in the same meal, but she has already given that up.  This week all things that produce yeast in the body she is against.  Nothing w/ vinegar, skins, fruits, fermented...but was ok to cover the salmon in capers, because she loves capers.  I need a chill pill.
