WICT= WHAT I COOKED TODAY

Ok, let's get caught up!
Wed. my friend hired me to cook for a church friend of her's who broke her ankle:
1.TOMATO BASIL SOUP
2.SPINACH/ARTICHOKE DIP W/ GLUTEN FREE CRACKERS
3.TURKEY MEATLOAF
4.ZESTY LEMON QUINOA
5.CARRIBEAN CHICKEN
6.SPICY BLACK BEANS AND TOMATOES
7.FANCY SALMON
8.DIJON BEETS
9.POT ROAST W/ CARROTS AND POTATOES
10.CAESAR SALAD

Thursday I cooked for one of my regulars whose son has high cholesterol.  I made them so very lean BBQ ribs that I will replace because they were so lean I over cooked them making them dry.
1.BBQ RIBS(W/ HIGH FRUCTOSE CORN SYRUP FREE BBQ SAUCE)
2.DILLY CARROTS
3.CHICKEN FRIED RICE
4.TERIYAKI BROCCOLI
5.TURKEY AND BLACK BEAN ENCHILADAS
6.CORN SALAD(ORGANIC CORN IS ALL I WILL USE ANYMORE)
7.PASTA FAGIOLI
8.SPINACH/ARTICHOKE DIP(A HEALTHY VERSION AND YUMMY, TOO)
9.CHICKEN W/ CHERRY/MARSALA GLAZE
10.PEAS AND MUSHROOMS

Friday I had 2 jobs.  First one of my very first clients who is also now a great friend!
This is the 8 servings of 5 entrees plan:
1.BERRY BACK RIBS(ORGANIC RASPBERRY SAUCE AND I ADD EXTRA SIRACHA FOR HER BECAUSE SHE REALLY LIKES HEAT)
2.COCONUT ALMOND CHICKEN(WHITE MEAT, BROC. AND A SAUCE MADE W/ ALMOND BUTTER
3.SAVORY POT ROAST(I ADDED CARROTS, POTATOES AND ONIONS TO THE RECIPE...THE SAUCE HAD TOMATOES AND HORSERADISH IN IT) 
4.3-HERB DRUMSTICKS(SKINLESS DRUMS W/ DIJON HERB GLAZE ROASTED W/ SWEET GRAPE TOMATOES)
5.CREAMY VEGETABLE SOUP(LOTS OF VEGGIES THEN 1/2 PUREED W/ RICE MILK)
6.WILD RICE BLEND SALD(W/ CRANBERRIES, PECANS, WALNUTS, CELERY AND AN ORANGE AND LEMON DRESSING

Friday night I had the pleasure of cooking for any awesome young couple to celebrate Valentines Day.  Mark hired me on the sly to surprise his girlfriend, Julie.  I hope they had as much fun as I did!  (<:

SALAD>MEDITERRANEAN CHOPPED SALAD
ENTREE>SHORT RIB AND CHIANTI RAVIOLI W/ MANCHEGO CHEESE SAUCE, LOBSTER AND SHRIMP RAVIOLI W/ LEMON/GARLIC BUTTER, AND BEET PASTA RAVIOLI W/ GOAT CHEESE CHIVE FILLING W/ ROASTED TOMATO SAUCE
DESSERT>CANNOLI

I bought the rav's and cannoli at LAZZAROLI PASTA in Germantown.  I could never do as good of a job making these as Tom Lazzaro can!  Go see him for a great Italian "fix".
